- 1 cup cottage cheese (0%–2% fat)
- ½ cup shredded cheese (cheddar or feta)
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- 1 cup optional mix-ins (spinach, bell peppers, broccoli, cooked sausage, or ham)
Instructions
- Preheat oven to 350°F (175°C) and grease a muffin pan or silicone mold.
- Blend eggs, cottage cheese, salt, pepper, garlic powder, and onion powder until smooth.
- Pour egg mixture evenly into muffin cups (about ¾ full).
- Add mix-ins and shredded cheese; gently stir.
- Bake for 18–22 minutes, until centers are set.
- Cool slightly before removing. Serve warm or store for later.
