  • 1 cup cottage cheese (0%–2% fat)
  • ½ cup shredded cheese (cheddar or feta)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 cup optional mix-ins (spinach, bell peppers, broccoli, cooked sausage, or ham)

Instructions

  • Preheat oven to 350°F (175°C) and grease a muffin pan or silicone mold.
  • Blend eggs, cottage cheese, salt, pepper, garlic powder, and onion powder until smooth.
  • Pour egg mixture evenly into muffin cups (about ¾ full).
  • Add mix-ins and shredded cheese; gently stir.
  • Bake for 18–22 minutes, until centers are set.
