Ingredients

Scale

For this Crockpot Buffalo Chicken Dip, gather the following ingredients:

  • 2 cups cooked chicken, shredded (rotisserie chicken works great)
  • 8 oz cream cheese, softened
  • ½ cup buffalo sauce (adjust to taste)
  • 1 cup ranch dressing or blue cheese dressing
  • 1 ½ cups shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 1 tablespoon garlic powder (optional)
  • 1 tablespoon onion powder (optional)
  • Salt and pepper to taste
  • Fresh chopped green onions (optional, for garnish)
  • Celery sticks, tortilla chips, or crackers for serving

Instructions

Prepare the Ingredients:

  1. Shred the Chicken: If you’re using rotisserie chicken, shred it using two forks or chop it into bite-sized pieces.
  2. Soften the Cream Cheese: Make sure your cream cheese is softened to room temperature to ensure it mixes easily with the other ingredients.
  3. Grate the Cheeses: Shred your cheddar and mozzarella cheese if not using pre-shredded.

Mix and Cook:

  1. Combine the Ingredients in the Crockpot: In the crockpot, combine the shredded chicken, softened cream cheese, buffalo sauce, ranch dressing, garlic powder, onion powder, salt, and pepper. Stir until all the ingredients are well mixed.
  2. Add the Cheese: Stir in the shredded cheddar and mozzarella cheeses, reserving a little of each to sprinkle on top later.
  3. Cook on Low or High: Cover the crockpot and cook on low for 3.5 hours or on high for 1.5 hours, stirring occasionally, until the dip is hot, bubbly, and fully melted.

Garnish and Serve:

  1. Garnish: Sprinkle the remaining shredded cheddar and mozzarella cheese over the dip and let it melt for a few minutes. Top with fresh chopped green onions, if desired.
  2. Serve: Serve the dip warm with your choice of chips, crackers, or fresh veggies like celery and carrots.
