  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 bag (10 oz) frozen spinach, thawed and drained
  • 2 cups marinara sauce
  • Fresh basil or parsley for garnish (optional)

Instructions

Prepare the Noodles:

  1. Cook the Lasagna Noodles: Bring a large pot of salted water to a boil and cook the lasagna noodles according to the package directions. Drain and set aside to cool slightly.

Prepare the Filling:

  1. Mix the Ricotta Filling: In a medium-sized bowl, combine the ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese, egg, garlic powder, onion powder, basil, oregano, and spinach. Stir until the mixture is well combined.

Assemble the Roll-ups:

  1. Spread the Filling: Lay the cooked lasagna noodles flat on a clean surface. Spread about 2 tablespoons of the spinach and ricotta mixture onto each noodle, spreading it evenly from one end to the other.
  2. Roll the Noodles: Carefully roll up each lasagna noodle with the filling inside, making sure the roll is tight but not too tight to avoid spilling the filling.

Bake the Roll-ups:

  1. Prepare the Baking Dish: Preheat your oven to 375°F (190°C). Spread 1 cup of marinara sauce on the bottom of a 9×13-inch baking dish.
  2. Place the Roll-ups: Place each rolled-up lasagna noodle seam-side down in the baking dish, arranging them neatly in rows.
  3. Top with Sauce: Pour the remaining marinara sauce over the top of the roll-ups, making sure they are all covered.
  4. Add Cheese: Sprinkle the remaining ½ cup of mozzarella cheese on top of the sauce for a melty, golden finish.
  5. Bake: Cover the baking dish with aluminum foil and bake for 30 minutes. Then remove the foil and bake for an additional 10 minutes until the cheese is bubbly and slightly browned.

Serve:

  1. Garnish and Serve: Let the roll-ups cool for a few minutes before serving. Garnish with fresh basil or parsley for a fresh, aromatic touch.
