For the Bites:
- 12 mini phyllo cups (store-bought or homemade)
- 4 ounces goat cheese, softened
- 2 tablespoons cream cheese, softened (optional for creaminess)
- 1/2 teaspoon honey (optional)
- 1 tablespoon fresh thyme leaves (optional)
- 6–8 fresh figs, stems removed and sliced
- 1 tablespoon olive oil (for brushing the phyllo cups)
- Salt and pepper to taste
Instructions
Prepare the Filling:
- Mix the Cheese: In a small bowl, combine the goat cheese, cream cheese (if using), and honey. Stir until smooth and creamy.
- Season: Add salt and pepper to taste, and mix in the fresh thyme leaves if using.
Assemble the Bites:
- Prepare the Phyllo Cups: Preheat the oven to 375°F (190°C). Place the phyllo cups on a baking sheet.
- Fill the Phyllo Cups: Spoon a generous teaspoon of the goat cheese mixture into each phyllo cup, spreading it out gently to cover the bottom.
- Add the Figs: Top the cheese mixture with one or two fig slices, depending on their size. You want the figs to be slightly visible on top of the cheese.
- Brush with Olive Oil: Lightly brush the edges of the phyllo cups with olive oil to ensure they bake to a golden, crispy texture.
Bake the Bites:
- Bake: Place the baking sheet in the oven and bake for 15-20 minutes, or until the phyllo cups are golden and crispy and the goat cheese filling is slightly browned.
- Cool and Serve: Remove the bites from the oven and let them cool for a few minutes before serving. Optionally, drizzle with a little more honey or sprinkle with additional fresh thyme leaves.
