Ingredients
1. 1 pound large sea scallops, thawed if frozen and side muscle removed if needed
2. Salt, to taste
3. Black pepper, to taste
4. 3 tablespoons unsalted butter, melted
5. 2 cloves garlic, minced
6. 2 tablespoons fresh lemon juice
7. 1/4 cup grated Parmesan cheese
8. 1/4 cup breadcrumbs, panko or regular
9. 2 tablespoons fresh parsley, chopped
10. Lemon wedges, for serving
Instructions
1. Preheat the oven to 400°F. Lightly grease a baking dish with butter, oil, or nonstick cooking spray.
2. Pat the scallops very dry with paper towels. Removing excess moisture helps keep the dish from becoming watery and helps the topping bake properly.
3. Place the scallops in a single layer in the prepared baking dish. Do not overcrowd them. Season lightly with salt and black pepper.
4. In a small bowl, stir together the melted butter, minced garlic, and fresh lemon juice until well combined.
5. Spoon the garlic butter mixture evenly over the scallops, making sure each scallop gets some of the butter, garlic, and lemon.
6. In a separate bowl, combine the grated Parmesan cheese, breadcrumbs, and chopped parsley.
7. Sprinkle the Parmesan breadcrumb mixture evenly over the scallops in a light, even layer.
8. Bake for 12 to 15 minutes, or until the scallops are opaque and cooked through and the topping is lightly golden.
9. Remove the baking dish from the oven and let the scallops rest for 1 to 2 minutes.
10. Serve hot with lemon wedges and spoon some of the buttery pan juices over the scallops before serving.
Notes
Patting the scallops very dry before baking is the key to the best texture. Scallops release moisture as they cook, so removing surface moisture first helps prevent the dish from becoming watery.
For a crispier topping, use panko breadcrumbs. For a softer topping, use regular breadcrumbs.
Be careful not to overbake the scallops. They are ready when they turn opaque and are just firm to the touch.
