Here’s what you’ll need:
For the Sandwiches
8 slices of bread
160 g cooked ham, thinly sliced
200 g grated cheese (such as Emmental or Gruyère, or a mix)
Soft butter, for spreading on the bread (optional but delicious)
For the Béchamel Sauce
40 g butter
40 g flour
400–450 ml milk (whole milk gives the best texture)
1/2 teaspoon salt
1/4 teaspoon black pepper
A pinch of grated nutmeg (optional but classic)
1 teaspoon Dijon mustard (optional, for a subtle tang)
For Finishing
A little extra grated cheese to sprinkle on top
