  • 1/2 cup peanut butter (smooth or chunky, as preferred)
  • 1 cup brown sugar, packed
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 10 cups popped popcorn (about 1/2 cup unpopped kernels)
  • Optional toppings: chocolate chips, mini marshmallows, pretzels, or sprinkles

Instructions

Pop the Popcorn:

  1. Pop the Popcorn: Pop 1/2 cup of unpopped popcorn kernels using an air popper or stovetop method, then set aside the 10 cups of freshly popped popcorn. Make sure to remove any unpopped kernels to avoid a crunchy surprise.
  2. Prepare the Baking Sheet: Line a large baking sheet with parchment paper or a silicone baking mat. Spread the popped popcorn evenly over the sheet.

Make the Peanut Butter Caramel Sauce:

  1. Melt the Butter and Peanut Butter: In a medium saucepan over medium heat, melt the butter and peanut butter together, stirring frequently until smooth and creamy.
  2. Add the Sugar and Syrup: Stir in the brown sugar and corn syrup, bringing the mixture to a gentle boil. Let it cook for 2-3 minutes, stirring constantly.
  3. Add Vanilla and Salt: Remove from heat and stir in the vanilla extract and salt. Mix well to combine.

Coat the Popcorn:

  1. Pour the Peanut Butter Caramel over Popcorn: Immediately pour the peanut butter caramel sauce over the popped popcorn, tossing gently to coat the popcorn evenly. Make sure every kernel is coated with the caramel sauce.
  2. Let It Cool: Allow the coated popcorn to cool and set for about 10 minutes, or until the caramel hardens slightly.

Optional Toppings:

  1. Add Extras: For a fun twist, you can sprinkle chocolate chips, mini marshmallows, pretzels, or sprinkles over the warm caramel-coated popcorn before it fully sets.
  2. Serve: Once cooled and set, break the popcorn into pieces and serve.
