Gather the following ingredients to make your Roasted Jalapeño Popper Grilled Cheese:
- 2 large jalapeños
- 4 slices of thick-cut bread (sourdough or white bread works great)
- 1/4 cup cream cheese, softened
- 1/4 cup shredded cheddar cheese
- 2 slices of bacon, cooked and crumbled
- 1 tablespoon butter (for grilling)
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
Roast the Jalapeños:
- Preheat the Oven: Set your oven to 400°F (200°C).
- Roast the Jalapeños: Place the jalapeños on a baking sheet and roast for 15-20 minutes, turning them occasionally until the skins are charred and blistered. Once done, remove them from the oven and let them cool slightly before peeling off the skins and removing the seeds.
- Chop the Jalapeños: Chop the roasted jalapeños into small pieces and set aside.
Prepare the Sandwich Filling:
- Make the Cream Cheese Mixture: In a small bowl, combine the softened cream cheese, shredded cheddar cheese, crumbled bacon, garlic powder, and chopped roasted jalapeños. Season with salt and pepper to taste.
- Spread the Filling: Spread a generous amount of the cream cheese mixture onto two slices of bread.
Grill the Sandwich:
- Prepare the Griddle or Pan: Heat a large skillet or griddle over medium heat and melt a tablespoon of butter.
- Grill the Sandwiches: Place the prepared sandwiches in the skillet, buttered side down. Grill for 3-4 minutes on each side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.
- Serve: Remove from the skillet and cut the sandwiches in half. Serve hot and enjoy!
