These Sneaky Zucchini Brownies are rich, chocolatey, and so fudgy, you’d never guess they’re packed with zucchini. The grated or pureed zucchini blends right into the batter, adding incredible moisture without affecting the flavor. Ingredients
For the Brownies:
½ cup vegetable oil
1½ cups white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
½ cup cocoa powder
1½ teaspoons baking soda
1 teaspoon salt
2 cups zucchini, shredded or pureed (do not drain liquid)
½ cup chopped walnuts (optional)
Optional Chocolate Frosting:
6 tablespoons cocoa powder
¼ cup butter
2 cups powdered sugar
¼ cup milk
½ teaspoon vanilla extract
Instructions
Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan.
In a large bowl, stir together vegetable oil, sugar, and vanilla until well blended.
Sift flour, cocoa powder, baking soda, and salt into the oil mixture. Mix until combined.
Fold in zucchini and walnuts (if using) until evenly distributed.
Spread the batter evenly in the prepared pan. Bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean.
Optional Frosting:
In a microwave-safe bowl, melt cocoa powder and butter together for 30–45 seconds.
Stir in powdered sugar, then gradually add milk until smooth.
Mix in vanilla extract.
Spread the frosting over warm brownies for a glossy finish.
