Description
These Crispy Shrimp & Mozzarella Stuffed Egg Rolls are golden and crunchy on the outside with a juicy shrimp filling and a melty mozzarella center. They are savory, cheesy, and perfect for parties, game day, or an easy takeout-style appetizer at home.
Ingredients
1. 12 egg roll wrappers
2. 1 pound large shrimp, peeled, deveined, and chopped into small pieces
3. 8 ounces mozzarella cheese sticks, cut in half
4. 2 green onions, finely sliced
5. 2 cloves garlic, minced
6. 1 teaspoon sesame oil
7. 1 teaspoon soy sauce
8. 1/2 teaspoon paprika
9. 1/2 teaspoon garlic powder
10. Salt, to taste
11. Black pepper, to taste
12. 1 large egg, beaten, for sealing the wrappers
13. Vegetable oil, for frying
14. Extra sliced green onions, optional, for garnish
15. Sweet chili sauce or spicy mayo, for dipping
Instructions
1. Add the chopped shrimp to a medium mixing bowl.
2. Add the minced garlic, sliced green onions, sesame oil, soy sauce, paprika, garlic powder, salt, and black pepper.
3. Mix until the shrimp is evenly coated with the seasonings and everything is well combined.
4. Place one egg roll wrapper on a clean work surface with one corner facing you, so it looks like a diamond.
5. Spoon a small amount of the shrimp filling into the center of the wrapper.
6. Place one half of a mozzarella cheese stick on top of the shrimp filling.
7. Fold the bottom corner of the wrapper up and over the filling.
8. Fold the left and right sides inward over the filling.
9. Roll the egg roll tightly toward the top corner, keeping the filling snug inside.
10. Brush the top edge of the wrapper with beaten egg, then press to seal.
11. Repeat with the remaining egg roll wrappers, shrimp filling, and mozzarella pieces.
12. Add vegetable oil to a deep skillet or heavy-bottomed pot and heat to 350°F.
13. Carefully add the egg rolls to the hot oil in batches, making sure not to overcrowd the pan.
14. Fry for 3 to 4 minutes, turning as needed, until the egg rolls are crisp, golden brown, and cooked through.
15. Transfer the fried egg rolls to a paper towel-lined plate to drain excess oil.
16. Let the egg rolls cool for about 2 minutes so the cheese can settle slightly.
17. Garnish with extra sliced green onions if desired.
18. Serve hot with sweet chili sauce, spicy mayo, or your favorite dipping sauce.
Notes
Do not overfill the wrappers, or the cheese may leak out during frying. Roll each egg roll tightly and seal the edges well with beaten egg for the crispiest result.
Make sure the oil reaches 350°F before frying. Frying at the right temperature helps the wrappers crisp quickly without becoming greasy.
